As a knife maker I understand how their functionality decreases over time as they begin to dull.
Knives truly are the workhorse of any professional kitchen, as a result chefs spend a lot of thought and money on their knives but perhaps less on looking after them. I have seen many hopeful new chefs carefully select the perfect blade to begin their career, only to have it abused and damaged upon first encountering a real living kitchen. While heartbreaking these knives can often be restored, although usually at further cost.
My role would be in teaching your team how to sharpen, perform light repairs on their knives and optimise them to make their daily prep more efficient and enjoyable. Saving you and your team expense and heartache.
